
This recipe and method was inspired by one of my favorite instagram accounts to follow from Nicole at @ohmyketo, she’s creative, kind, and inspirational, if you’re not already, follow her! She has a keto blog also, check it out here!
This method is fairly easy but if you have any trouble, here’s a quick tutorial to help you follow along with the recipe.
- In a microwave, at 30 second increments, or a double boiler stirring occasionally, melt the mozzarella cheese, being very careful not to scorch it. Once melted and completely elastic, mix in the cooked and crumbled bacon and sautéed jalapeno until evenly mixed.
- Once combined place the cheese mixture on a large piece of parchment paper and roll it out to a rectangle shape and then fold in half to create a square shape about 1/2 inch thick.
- Place rolled out cheese mixture in freezer for 30 minutes to harden slightly.
- Remove cheese mixture from oven and cut into 9 squares (3 rows of 3). Next, slice those smaller squares in half diagonally to create triangle shapes.
- Dip and coat each cheese triangle in the egg wash, then into the “bread crumbs”.
- Preheat oil to 200F in a cast iron skillet.
- Shallow fry till golden brown, about 15 seconds each side.
- Place on a paper towel lined plate to drain oil.
- Serving suggestion: Serve with sugar free marinara sauce.
Low Carb Bacon Jalapeño Fried Mozzarella

A low carb, grain free version of fried cheese with crispy bacon and spicy jalapeño.
Ingredients
- 2 cups shredded mozzarella cheese
- 1 oz fresh jalapeño, finely diced, de-seeded if you want less spice
- 1 tspn olive oil
- 3 bacon slices cooked and crumbled into small pieces
- 3/4 cups Pork Rind ‘Bread” Crumbs (I like this brand)
- 1 1/2 cups olive oil (or oil of choice)
Egg Wash
- 1 egg
- 2 tbsp heavy whipping cream
Whisk together until pale yellow and perfectly mixed.
Optional
- No Sugar Added Marinara Sauce for dipping.
Directions

- Meanwhile saute the jalapeño with the tspn of olive oil for a couple minutes on medium heat until lightly toasted. You may want to open the windows or turn on the vent for this part!
- Once the mozzarella is melted and very elastic, immediately stir in crumbled bacon and cooked jalapeño until evenly combined.
- On a piece of parchment paper, with a rolling pin, roll out the cheese mixture into a large square shape about a 1/2 inch thick.
- Place in freezer for 30 minutes.
- Remove from freezer.
- In a cast iron skillet, heat the 1 1/2 cups oil and let heat up while you prepare the cheese.
- With a pizza cutter or knife, slice the cheese into 9 squares (3 rows of 3).
- Next, slice those smaller squares in half diagonally to create triangle shapes. See step by step tutorial above.
- Dip and coat each cheese triangle in the egg wash, then into the “bread crumbs” and set aside.
- Oil should be heated to 200F. Shallow fry till golden brown (about 15 seconds each side).
- Place on a paper towel lined plate to drain oil.
- Serve with sugar free marinara sauce or alone. Enjoy!
