Keto Double Chocolate Chunk Muffins

I’m so excited to share this recipe with you!

Double chocolate chip muffins from my local bakery are my weakness. They’re the first thing I would go get when I had a scheduled “treat day”.  Writing this from quarantine, I’m happy to report that I can avoid leaving my house and satisfy that carbie craving!

I’ve been working on this recipe for nearly 6 months. It was never “just right” until I learned how to work with lupin flour.

Lupin flour is a game changer, it really helps me achieve that denser muffin texture. If you’ve never used it and are hesitant to purchase it, I’m here to tell you that you need it in your life.

Follow these step-by-step instructions to get them just right!

Pre-heat oven to 350F/180C. Line 5 muffin pan wells with liners. Set aside.

In a small saucepan on low heat, combine the cocoa powder, coffee, and butter just until combined. Stir occasionally.  Should be rich, smooth and velvety. Careful not to let it burn. Set aside to cool.

In a medium bowl, combine all dry ingredients, except for chocolate chunks. Whisk together. If you notice many clumps, I suggest sifting.

In a large bowl, combine the eggs, sour cream, and cocoa mixture with a whisk.

Combine wet and dry ingredients, mix until smooth.

Gently fold in chocolate chunks.

Scoop the batter evenly into prepared muffin pan.

Bake 25-28 minutes or until a toothpick inserted comes out clean.

A rich and decadent muffin packed with chocolate, while still keeping it keto friendly and grain free.

Ingredients

  • 3/4 c almond flour (I use this brand)
  • 1/4 c lupin flour (I use this brand)
  • 1 tsp baking powder (I use this brand)
  • 2 large eggs
  • 1/4 c cocoa powder (I use this brand)
  • 3 tbsp unsalted butter
  • 1/4 c granulated sweetener (I use this brand)
  • 2 tbsp brown sugar substitute (I use this brand)
  • 1/4 c full fat sour cream
  • 1 tsp instant coffee or espresso (I use this brand) ***
  • 1/4 tsp blackstrap molasses (I use this brand) ***
  • pinch of salt
  • 3.5 oz (about 1/3 c) coarsely chopped, no sugar added milk chocolate (I use one bag of this brand. Use KINDKETOMAMA at checkout to save 10%!)

  1. Molasses is KETO?? I don’t think so.. Don’t think the milk chocolate is either.. If the ingredients are not KETO, how can the brownies be KETO??? Just sayin..

    1. Joe, I think you mean molasses is not “keto friendly”. And the answer is no, not keto friendly when taken in large amounts but this amount is so small it most likely will not make a difference. It’s also optional, see the asterisk and foot notes.
